Ingredients

  • 3 cups fresh green beans, washed, trimmed and cut in half
  • 2 teaspoons olive oil
  • 1 garlic clove, minced (or 1/8 teaspoon garlic powder)
  • ½ cup chopped onion
  • ½ cup fresh, diced green pepper
  • 2 teaspoons fresh chopped basil (or ~ 1 teaspoon dried)
  • 1 ½ teaspoons fresh oregano (½ teaspoon dried)

Preparation

  • Boil a pot of water large enough to hold the green beans.
  • Place green beans in the boiling water, and cook 5-10 minutes, until they are bright green, but still crisp. Drain and set aside.
  • Heat oil in a large, nonstick skillet. Add garlic, onion and green pepper, and sauté until soft.
  • Stir in the basil, oregano, and green beans, and mix until thoroughly combined.

Nutritional Information

Makes about 6 servings. Approximate nutrients per serving: 40 calories, 1.5 grams protein, trace fat, 8 grams carbohydrate, 3 grams fiber, 5 milligrams sodium.
