Easy Roasted Cabbage

Roasting cabbage brings out it's natural sweetness, convincing even the pickiest of eaters that it's worth a bite.

Roasted Cabbage Steaks

Ingredients

  • 1 (2-3 pound) green cabbage
  • 2 tablespoons olive or canola oil
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon honey
  • 1 ½ teaspoons garlic powder

Preparation

  • Preheat the oven to 450°F.
  • Line a large baking sheet with parchment paper. If the cabbage is large, prepare a second sheet.
  • Remove any dried or loose leaves from the cabbage. Rinse cabbage and pat dry with a paper towel.
  • Place cabbage on a cutting board and use a sharp chef knife to cut off the stem. Cut the cabbage into 4-6, 1-inch slices, and discard the end with the tough stem.* Gently place cabbage slices on the prepared baking sheet to hold them together.
  • Combine the sauce ingredients in a small bowl: oil, soy sauce, honey, and garlic powder.
  • Place in the oven and roast for 25 minutes or until the cabbage starts to brown around the edges and the center is fork tender.
  • Serve with a spatula to help keep cabbage leaves together.
