Roasted Brussels Sprouts with Dried Cranberries and Nuts

High in fiber, vitamins, minerals, and antioxidants, Brussels sprouts make a nutritious addition to your diet. This simple but oh-so-flavorful recipe can be the star side dish at your next holiday meal, or all year round!

Ingredients

  • 1 pound fresh Brussels sprouts, trimmed and sliced in half lengthwise
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup dried cranberries
  • ¼ cup chopped nuts like pecans, walnuts, or almonds

Recipe

  • Preheat oven to 400°F.
  • Place Brussels sprouts in a large bowl. Drizzle with oil, and sprinkle with salt and pepper. Toss evenly to coat.
  • Place Brussels sprouts cut side down on a rimmed baking sheet to contain the vegetables. Roast 25 to 35 minutes until the inside is tender and the outside is dark brown and crisp.
  • During the last 5 minutes of cooking, sprinkle dried cranberries and nuts on the Brussels sprouts and continue roasting.
  • Remove from the oven to a serving dish. Serve warm.
