Almond Milk Eggnog

Two glasses of eggnog

Just as delicious as old-fashioned eggnog, this dairy-free eggnog recipe will tempt your taste buds all holiday season long. Celebrate National Eggnog Month with a cup or two!

Ingredients

  • 6 egg yolks
  • ½ cup sugar
  • 6 cups unsweetened almond milk, divided
  • ½ teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 2 teaspoon vanilla extract
  • Dash of rum, bourbon, or rum flavoring (optional)

Directions

  • In a medium saucepan, whisk together the egg yolks and sugar until well combined.
  • Add in 3 cups of almond milk and whisk until combined.
  • Place saucepan on a stove burner at low heat, and continually stir until a thermometer in the mixture reads 180°F.
  • Remove from heat and stir in the remaining almond milk.
  • Add in the nutmeg, cinnamon, vanilla extract, and whisk together until well combined.
  • Cover and store in the refrigerator for at least 2-3 hours to chill.
  • Once cooled, stir well or place in a blender to mix all ingredients.
  • Serve in individual cups, and flavor with dash of rum, bourbon, or rum flavoring, if desired.
