Program outline by weeks

I. Food Service Systems Management - 16 weeks

    Main Kitchen – 7 weeks
    Food Service Audit – 1 week *
    Cash Operations – 3 weeks
    Staff Relief – 2 weeks
    Advanced Administration – 3 weeks

    * Interns will be involved in group exercises that include food cost audit, classes on labor and food costs, and meeting budget requirements. Speakers with expertise related to food service systems management will be the basis for this workshop-type experience.

II. Clinical Nutrition - 18 weeks

    Medicine – 5 weeks
    Nutrition Support – 5 weeks
    Pediatrics – 2 weeks
    Renal – 2 weeks
    Staff Relief – 2 weeks
    Advanced Clinical Services – 2 weeks
    Such as: advanced medicine, oncology, burns, neuroscience, surgery, cardiovascular, transplant and advanced pediatrics.

    **During the Nutrition Support rotation, the interns will learn about enteral and parenteral nutrition support. Experiences relating to this include lectures, case studies, and study guides. Clinical experience will include time to interpret and evaluate the therapy given to patients.

III. Community Nutrition - 4 weeks

    This rotation includes time in the Outpatient Nutrition Clinic, group and individual teaching opportunities, and exposure to other comunity agencies, as well as participation in the Peer Counseling program with university students.

IV. Affiliations - 4-5 weeks

    Affiliations are planned to meet the needs and interests of each intern. Examples of affiliations include diabetic camp, school nutrition programs, diabetes treatment center, long term care facilities, and a gourmet food and catering business.

V. Other

    Vacation – 2 weeks
    Orientation – 1.5 weeks
